A couple years ago, Jeff Fitzsimmons annoyed a roommate by having an aging potato sprouting in a drawer. So he put up a "shrine" for the potato and noticed how much the potato looked like a bonsai tree. This led to the creation of the kit, which includes a base for the potato, some sand-like particles and a book he wrote that has facts about real bonsai melded with a fictional account of bonsai potato growing. The kits sell for $15 apiece, and Mr. Fitzsimmons says more than 22,000 customers have bought them. The concept is a joke on today's fast-paced society. Mr. Fitzsimmons, who runs the enterprise with his friend, Mike Dillon, says, "It's Zen without the wait!"
